Your first stop is a pilgrimage spot for champagne lovers: the Benedictine Abbey in Hautvillers where the legendary Dom Perignon developed some of the production methods that still characterize the making of champagne. When you set your eyes on the tomb of the most famous forefather of champagne, you might be surprised to learn that he wasn't necessarily the biggest fan of bubbly and a lot of his research was actually aimed at slowing down the double-fermentation process that created it.
Next, we'll take you to the nearby town of Epernay to visit a family-run winery whose production process has changed very little over the last 300 years. Your tour of the winery will include every step of the champagne-making process and also teach you about the many ancient traditions of champagne making. Afterwards, you'll taste four spectacular versions from their stocks. As you enjoy a crash course on how to distinguish the various tastes hidden within this legendary wine, you'll also learn how to open a bottle the 'proper' way, i.e., with a saber. As you taste the champagne from this bottle, you'll also learn the history behind this bombastic and showy way of chopping the head off a glass bottle. Hint: Napoleon was involved.
Afterwards, you'll head into Epernay and break for lunch. It isn't included in your Champagne tour, but your guide will give you plenty of recommendations for where you can go to enjoy authentic versions of the region's famously hearty cuisine.
Epernay is the world capital of champagne production and the caves under the city streets are literally packed with a treasure-trove of aging champagne.
After a perfect day sampling the best of the region, you’ll hop in the mini-bus and return to Paris, arriving around 6.30pm; just in time to get a few more recommendations from your guide and head out to dinner!
